Champagne Laurent-Perrier was founded in 1812 but the story is really one of modern renaissance. In 1939 Eugenie Laurent sold the House to the de Nonancourt family and in 1948 Madame de Nonancourt passed control of the House to her son Bernard. Full of energy and ideas, Bernard was unafraid to challenge convention and had a modern vision of a champagne style that was lighter on the palate and could be enjoyed any time. He brought innovation and a pioneering spirit to the House, and so the Laurent-Perrier style of elegance and freshness was born. His legacy lives on through his daughters who manage the House today. Laurent-Perrier has pioneered the Brut Nature category with the Ultra Brut. It is a champagne with no added sugar (‘dosage’). It expresses the quintessential character of champagne and was known as ‘Grand Vin sans Sucre’ when it was first launched in 1889. Re-launched in 1981 by Bernard de Nonancourt, it illustrates the House’s know-how in crafting fine champagnes. Ultra Brut is a blend of 55%* Chardonnay and 45%* Pinot Noir. The wine is effectively made in the vineyards because without the final adjustment that the addition of dosage allows, it is essential to get the perfect balance between sugar and in the grapes at harvest. It is aged in the cellars for a minimum of six years before being released as it reaches perfect maturity. In appearance, Ultra Brut is crystal clear and bright with a delicate bead of fine bubbles. The nose is refined and slightly stony in character, subtle yet complex with a wide range of aromas including citrus, white fruit and honeysuckle. The palate opens out to reveal light floral flavours and mineral notes. There is a long lingering finish giving a lasting impression of purity, freshness and delicacy. The Ultra Brut pairs perfectly with seafood, sushi and a white fish ceviche as well as young parmesan or a pata negra ham.
